Being a Mum myself, and a daughter, I know how important Mothers Day is. Whether it is breakfast in bed, a book full of vouchers, a special trip away to her favourite place, or a simple kiss on the cheek, Mum‘s like to feel appreciated. And Mum‘s feel sentimentality when it comes to the birth of their child. Sometimes I look at my son Noah and wonder where the time has gone. It‘s been almost 6 years since he was born and a lot has happened in that time. I also remember a lot about that time in my life...but not a lot of what was happening in the world around me..all that mattered was my whole world inside me.

Mothers Day Breakfast in Bed (that the kids can help with)
French Toast
2 eggs
1/2 cup milk
1/4 teaspoon cinnamon
butter
day old bread
icing sugar
Maple Syrup
Heat the frypan on the stove with the butter. Mix together the eggs, milk and cinnamon, and then dip the slices of bread into the mixture, completely covering the bread. Make sure both sides are wet. Pull the bread out and let the excess drain off while holding with a fork over the bowl. Place a slice of bread in the frypan and cook thoroughly on both sides, making sure that the bread is lightly browned before turning.
When cooked, place on a plate and cut into two triangles, sprinkle with icing sugar, and then drizzle with Maple Syrup. Add a couple of straberries, and serve with orange juice. Superb!
